WEEKLY MENU 06.21.20

It’s a twofer celebration during the Weekly Menu 06.21.20 – Father’s Day and the first day of summer!

If ever there was a year to celebrate ANYTHING, this is it. So getting a two for one makes me a little bit giddy. Here in Erieland, the beaches are open, and completely beautiful, albeit a teensy bit chilly. (The water temp is currently 63 degrees.) But we are a hearty lot, and pictures abound of intrepid swimmers and boaters all over local social media.

And Father’s Day is always a treat – it’s super fun to see what the Boys will tempt Pops with as a fun gift. Bert is ridiculously tough to buy for, so hope springs eternal, but we’re often less than successful. Maybe this year will be different. (Ha!)

Kissing Summer~

We’re starting with a Father’s Day Celebration that is actually filled with Bert’s favorites. The Crispy Chicken Club Sandwiches are a family favorite too, which is helpful. Don’t get me started on the Zebra Cakes. They are decadent. Pure and simple. And sooo good. The diet will have to wait until Monday.

We’re (Bert is) grilling steak and peppers on Tuesday and making an easy steak fajita. Super tasty and a good way to stretch out a piece of meat.

Yep: grilling again on Wednesday – but with a topping that we’ll make inside. Sauteed onions and garlic will be married with a little pasta sauce and baby pepperoni for a tasty topper for the burgers. We’ll melt a piece of provolone on the whole shebang and eat a super messy fork burger. We’re having a healthy pasta salad side. (Because that’ll make up for the burger. Ahem.)

Our wonderful Crock Pot (affiliate links follow – see disclaimer page for details.) is into rotation on Friday with our Shredded Chicken Joes. They are a light take on Sloppy Joes – a little sweet, a little sour and a whole lot awesome. Perfect easy Friday night on the patio fare.
