Holy cow! June is here ~ and our Weekly Menu 05.31.20 preps you for dinner every night. Some grilling, some old school dinners with a twist, and another Guest Chef!
A huge boon of the Quarantine of 2020 has been the amount of time we have spent together as a family, talking and laughing. We’ve spent a fair amount of that time overlooking Presque Isle Bay with a beer in hand. Only downside? Spring in Erieland is hit or full on. It stays chilly for a while. The lake influences the cool temps, I’m sure. So the only other thing we could have used on our runs to the lake was a burn barrel. Or….
FIRE PIT!
My Mother’s Day gift from the boysies was the creation of a fire pit. And I say my gift a little tongue in cheek. What is it with men and fires? The bigger the better. We’ve gone through as much fire wood since Mother’s Day as we did all of last winter.
I’m not real outdoorsy. In my book, roughing it is staying at a Red Roof Inn. I have never slept in a tent, and although I went to (and loved) summer camp, we had cabins and full running water. But this walking out the back door and cozying up to the fire is something I can get behind. And s’mores? Yes please!
We’re having “Brookies” for dessert on Sunday night. These ones are a combo of brownies and cookies (hence the funky name) and are stuffed with peanut butter cups. You’ve got to know those are going to be an integral part of the Sunday night s’mores. I don’t even care if they melt. I’m just looking forward to licking my fingers!
More fire!
Of course we’re (and by “we’re” I mean Bert) grilling on Sunday. Wrapping up a pork chop with bacon fancies them up enough to count for “Sunday Dinner” (that should be said in a booming, echoing voice). The Chipotle Maple Glaze is an unbelievable addition. Smoky, spicy and sweet, it goes great with pork. If you haven’t tried it, you really should.
We’re gussying up regular meatloaf with some taco seasoning on Monday. We’ll smother it with taco sauce instead of ketchup and melt on some shredded cheddar the last 10 minutes that it cooks. Sooo good!
Our Guest Chef this week is…. Bert! One of the best parts of the Guest Chef series is what they actually come up with to make. We saw the Pioneer Woman do a variation on fried rice that was intriguing, to say the least. Bert is running with it – no grilling involved!
