Memorial Day is here, and the unofficial start to summer is especially welcome in our Weekly Menu 05.24.20.
One of our favorite ways to celebrate Memorial Day is with a multi-day party. We’re eating special on Sunday and Monday. It let’s us try two different meals that work great for (almost) summer grilling time.

We’ll add in some fun party drinks on both nights, and probably a little sweet treat or two as well. Buzzed Cherry Bombs are super fun to eat – and they are as easy as can be. Those cover the sweets and the fun party drinks!

And Bert is in fine form this year. We’re putting him to work (and to work again) all week. Hope the weather holds up! We’re starting with basic Chicken Kabobs on Sunday. We have much better luck if we split up the proteins and veggies when grilling. So all the chicken will be marinated and popped onto their own skewers, and the Rainbow Veggies will be too. It makes it easier for Bert to cook each one to perfection without worrying about burning anything.
We’ve got a fabulous Guest Chef this week. A friend mentioned that her kids were taking turns on dinner, and I thought that was brilliant. Plus, Mama needs a break. Does anyone else feel like they’re cooking constantly?

Middle Son stepped up and is making a family favorite. Chef’s Restaurant in Buffalo, NY makes an unbelievable Italian comfort food with Spaghetti Parm. They toss cooked spaghetti with great marinara and smother the whole dang thing with shredded mozzarella and Parmesan cheeses. Then they bake it until the cheese is bubbly and stringy. We add some meatballs to cut the cheese. (Yep. I said it.) Check out our take on Meatball Parmesan here. We’ll use frozen meatballs (Oh! The horror!!) for an easy take.
The grilling continues with our Mojo Pork Chops. The recipe is for chicken, but it’s a great marinade for chops too. We’re gussying it up a little bit with some pineapple BBQ sauce. The canned pineapple has been staring at me from the pantry, and the sweet will go great with the citrus from the Mojo Marinade. More on that later. (If it works.)
