WEEKLY MENU 03.12.23

Saint Patrick’s Day hits during the Weekly Menu 03.12.23, and we’re celebrating with a traditional feast.

We’re giving Saint Patrick’s Day a nod during the Weekly Menu 03.12.23 while hoping our esteemed bishop slides a little dispensation our way. The celebration is a little different than it was back in the day, but it’s still a fun day to honor all things Irish. The food is good old fashioned comfort, and the cup of cheer served with it sets the mood for a happy, easy party.

I’ve mentioned it before, but I come from a large (eight kids) Catholic family. Mom was German in heritage, and Dad was Irish. A mixed marriage, if you will. The two ancestries hold many of the same traits, but vary in the biggies: Mom was more stoic and reserved, and Dad… wasn’t.

Mom identified her children as either German or Irish, with little mixing of the two. I thought that was bunch of hooey until I had my DNA tested. And found out that instead of being a 50/50 split, my DNA is about 67% Irish. Turns out that Mom was right – at least about me.

I identify as Irish.

My beer of choice is Guinness, potatoes are my spirit food, and my most favorite place in the whole world is Ireland. This week was made for me.

Weekly Menu 03.12.23

The Weekly Menu 03.12.23 includes our Saint Patrick’s Day Menu for the actual day. It’s a full on Sunday meal that we’re having on a Friday during lent, hence the hope for dispensation. I’m sure Jesus loves the Irish, so it feels like we’re in – or at least that’s the plan. If that is too much work for a Friday night, grab a fabulous Rueben Sandwiches from a favorite restaurant. Top dinner off with a home made shamrock shake, which is super simple and delicious – once a year.

How are we filling in from there? Chopped Burgers start the week. Nothing like some hearty meals to keep us warm. Oven fries will round out our dinner and use up the last of the pantry spuds.

Taco Tuesday is chicken tacos this week. I chop up boneless, skinless chicken into small pieces, sauté and sprinkle with taco seasoning. Super simple. We could bake the chicken breasts after sprinkling with taco seasoning and chop them up at dinner time too. I’ll put out plenty of chopped lettuce and Mexican cheese to round out the soft shell tacos.

I’m feeling pasta for Wednesday, and we have some frozen meatballs in the freezer: that’s another easy meal for mid week. I’m thinking we’ll offer up a meat free meal on Thursday (in lieu of Friday) with Red Beans and Rice. Of course, sausage always rounds that out spectacularly, so… We’ll see.
