We’re partying again during the Weekly Menu 02.07.21 – football is on the menu!
If ever there was a good excuse for eating in front of the TV, the Super Bowl is it. I’ll let you in on a little secret: we are not strangers to dinner in front of Wheel of Fortune and Jeopardy. Sometimes a relaxing meal with the whole family around happens in the living room. While munching. But this weekend is the granddaddy of all couch eating.
Our menu changes every year, depending on the teams involved, but the plan remains roughly the same: we take one main dish and create two different main courses. A couple of years ago, it was Ram Hot Dogs and Patriot Hot Dogs. Last Year, it was 49’ers Golden Nugget Sliders, and Chiefs BBQ Chicken Sliders.
Obviously sammies are de rigueur for TV Eating
This year, we’re pulling pork into the mix. (See what I did there?) We’re having Chiefs BBQ Pulled Pork Sandwiches and Buccaneers Cubano Dogs. Check out the full Super Bowl menu. The menus for years gone by are on there, too, if you’re not in the mood for pork.
The only reason I care who’s playing in the game is because it dictates what we’re eating. Repeating teams makes being creative a little more difficult!
The Weekly Menu 02.07.21 has a full spread of dinners, though.
We’re going with a meatless comfort meal on Monday. There’s just nothing like a big bowl of Cajun Red Beans and Rice to take off the winter chill. And yep, it’s easy to eat in front of the TV too.
We’re ditching tacos for a big salad on Tuesday; the meat will be the same, but we’ll nestle it into a platter of romaine lettuce with a bit of shredded cheese, tomatoes and green onions. The boys love Chipotle, and I found a great copycat recipe for their Hot Salsa, so I’ll make that too. I’ve never ground my own chilis before, but luckily I have a coffee bean grinder/spice grinder that does the trick. (Affiliate links follow – see Disclaimer page for details.) Plus some chili-ranch (a cup of ranch dressing with a tablespoon of chili powder) to top.
D got his way again – we’re having his favorite dinner on Wednesday. Luckily Chicken Fra Diavolo is easy (and not bad for us) so we’re happy to put it on the menu. Bert isn’t a huge fan of pasta: I’ll make some extra rice on Monday and he can sub in that for the rigatoni. It’s really tasty that way too.

The Copycat Chipotle Salsa is from Hot Rod’s Recipes. The Crusty Bread (which is a family favorite – and super easy) is via Life As A Strawberry. The Cheeseburger Soup is from The Recipe Critic. My recipe is a little different, but I’ve never written it down, so… just add half a cup of ketchup to the soup when it’s about done.
