Weekly Menu 01.26.20 is full of comfort food and lighter eating for the last week of January~
How glorious is the post picture? Seeing the Aurora Borealis is on my bucket list. It’s very otherworldly looking, kind of the original neon. What is the Aurora Borealis?
An aurora (plural: auroras or aurorae),[a] sometimes referred to as polar lights, northern lights (aurora borealis), or southern lights (aurora australis), is a natural light display in the Earth’s sky, predominantly seen in the high-latitude regions (around the Arctic and Antarctic).
Auroras are the result of disturbances in the magnetosphere caused by solar wind. These disturbances are sometimes strong enough to alter the trajectories of charged particles in both solar wind and magnetospheric plasma. These particles, mainly electrons and protons, precipitate into the upper atmosphere (thermosphere/exosphere).

Regardless, there are some pretty cool locations that you can go to see the Northern Lights. Fairbanks Alaska is one of them~ check out the full list from The Travel Channel. The best time to see them is on a cold, clear night during the winter or early spring – so either get moving or get planning for next year!

The Weekly Menu 01.26.20 is full of wonderful, easy eating this week. We’re all still trying to eat lighter, so there’s some of that in there too! Sunday dinner starts with a Sweet & Spicy Popcorn – a family favorite that is just a smidge nostalgic. You don’t need any fancy popcorn machine, just a heavy Dutch oven or soup pot.
Then we’re having a super easy Chicken Pot Pie – which is basically chicken stew topped with frozen puff pastry. More on that later. And the cheesy mashed potatoes? I’m sprinkling grated sharp cheddar of the top of Weeknight Mashed Spuds. Tricky, huh?
You might recognize the Saucy One Pan Sausage Noodles with Peas from last week. What can I say? We got a better offer for dinner (and coupons in our email) so we dusted it. We’ll for sure give it a go this week. Unless, you know, we get another better offer.
I try to accommodate dinner requests from my people – and our oldest really digs Indian food. We hit the lunch buffet at our favorite Indian restaurant at least once a month. We’re going to give Butter Chicken a shot on Thursday. The recipe looks super simple and delicious.
