WEEKLY MENU 01.03.21
We’re opening the door on another year, thank God, during the Weekly Menu 01.03.21.
Weekly Menu 01.03.21 includes resolution time – but I don’t think we actually SHOULD resolve. Evolve? Yes! Let’s chase the positive, be accepting and supportive and be present. Above all that? Give thanks. Check out my favorite way to think about the New Year at Evolve not Resolve. We can strive to be better without losing sight of how good we already are.
This week is our 27th anniversary. January 8th was the first day the church had available when we got engaged many (many) years ago. Bert was a little shocked that I could get a date set so fast, but I had been waiting for a while and knew it was right. Of course, we live in beautiful Erieland, and had a HUGE snow storm the week of the wedding. I think we got at least 18″ of snow before the big day. January 8th dawned clear and bright, though.
It didn’t stay that way, of course. By the time the reception ended, it was snowing again, in a big way. We had a 5:55 am flight out of the Erie International Airport the next morning, and it was the last flight out for days. But we made it to Pittsburgh and eventually Antigua. Getting back was more of a trial, but the trip itself was idyllic.

We’re going out for dinner on Friday to celebrate – hence the “Take-Away” on the menu. Before we get there, though, we’re enjoying a lightened up Weekly Menu 01.03.21 with lower carb meals that are bumped up with veggies. It’s holiday recovery around here!
I’ve been jonesing for salmon, but two of the boys don’t like it. Baked fish lets me make us all happy – salmon for Bert, Baby Boy and I, cod (or frozen fish sticks) for the squeamish. We’ll start with Cheddar Jalapeno Dip with mini bell peppers and pretzel crackers to stay a little healthier.
Bert loves the Sopranos, and he got a Sopranos Cookbook for Christmas. He’s on tap to make dinner Thursday. I think he’s leaning towards Pasta Primavera, which sounds super tasty. It has veggies in it to keep us in line, although the cream might mess with our best intentions. Oh well. Everything in moderation – even moderation!

The Sheet Pan Quesadilla is from the Pioneer Woman. We saw her make it one Saturday and had it for lunch. It was terrific (and easy) so it made the cut for Taco Tuesday.
