Did you know “Pumpernickel” (very) loosely translates into “Devil’s Farts”?
“The philologist Johann Christoph Adelung states that the word has an origin in the Germanic vernacular where pumpern was a New High German synonym for being flatulent, and Nickel was a form of the name Nicholas, commonly associated with a goblin or devil (e.g. Old Nick, a familiar name for Satan), or more generally for a malevolent spirit or demon. Ahem. I think Pumpernickel ONION Toasties fit the bill.
They key to these fabulous little bites is the bread, of course. But not just any bread – little cocktail size pieces are required. The good news is that the loaf freezes fabulously for up to 3 months, so you can use just what you need to entertain.
I used this mandoline slicer (affiliate link), which I love, to slice the onions super thin and uniform, but they are also delicious cut thinly by hand. I left the onion off some of them for those that don’t adore them. {Baby Boy}
Preheat the oven to BROIL or set up your toaster oven (affiliate link)

Mix up the topping well, and add a dollop to the top of each toastie.

Pumpernickel Onion Toasties
Ingredients
- 12 pieces Pumpernickel Bread, Cocktail Size
- 1 medium Yellow Onion, sliced thinly
- 1/2 cup Mayonnaise
- 1/4 cup Parmesan Cheese, grated
Instructions
- Preheat oven or toaster oven to Broil.
- Place bread on baking sheet or broiler pan. Add one slice of onion to each piece of bread.
- Mix Mayo and Parmesan cheese together. Dot each toastie with about 1 teaspoon of the mixture. Spread it out carefully using an offset spatula or butter knife.
- Cook until brown and bubbly, about 8 to 10 minutes.
