Pork Salsa Verde Tacos are ridiculously easy and so good!
Pork Salsa Verde Tacos are made with… wait for it… Salsa Verde. Green Salsa is not spicy at all – because it’s not made with chilis or peppers – it’s made with tomatillos! They look like little green tomatoes, but they aren’t.
So what are tomatillos?
The tomatillo (Physalis philadelphica and Physalis ixocarpa), also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical and green or green-purple fruit of the same name.[1] Tomatillos originated in Mexico and were cultivated in the pre-Columbian era.[2] A staple of Mexican cuisine, they are eaten raw or cooked in a variety of dishes, particularly salsa verde.
Tomatillos are a key ingredient in fresh and cooked Mexican and Central-American green sauces. The green color and tart flavor are the main culinary contributions of the fruit. Purple and red-ripening cultivars often have a slight sweetness, unlike the green- and yellow-ripening cultivars, so generally are used in jams and preserves. Like their close relatives, Cape gooseberries, tomatillos have a high pectin content. Another characteristic is they tend to have a varying degree of a sappy, sticky coating, mostly when used on the green side out of the husk. Wikipedia
They come in a variety of colors, but the green ones are used for the slightly tart salsa verde.

Salsa Verde Comes Prepared in the Mexican Food Aisle. It’s great to have around – we love it with chips, on tacos, on burgers… you get the idea.
You can absolutely make your own salsa verde – and it’s pretty easy. If you’re looking for tomatillos in the grocery store, keep in mind they have a little papery husk on them. You remove that husk and clean off the slightly sticky coating before using. Use this recipe for Salsa Verde to make your own.
But we’re using the jarred stuff.

This is another one of those ridiculously simple meals that works out every time and is just delicious.
Get your crock pot (affiliate link) out. Spray it (liberally) with cooking spray. Put in the pork chops and spread with the Salsa Verde. Dab on a tablespoon of butter.
Let cook. Enjoy the aroma.

Pork Salsa Verde Tacos
Ingredients
- 3 ea Center Cut Pork Chops
- 1/2 cup Salsa Verde
- 1 tbsp Butter
- Cooking Spray
- Soft Taco Shells
- Shredded Monterey Jack Cheese
Instructions
- Spray inside of crock pot well with cooking spray, and turn on to high.
- Lay pork chops in crock pot and spread salsa Verde evenly over top. Dot with butter.
- Cook pork for 2-1/2 to 3 hours on high or 5 to 6 hours on low. Pork should separate easily with a fork.
- Shred pork in pan juices and serve in taco shells, sprinkled with shredded cheese and additional Salsa Verde.
