Launching into Fall: Most Tempting Soups Ever
Fall is coming? Fall is coming! Yippee! We have a great reason to get out our favorite soups and their easy recipes.
I adore soup.
Hearty soups? Check. Light soup? Check. Brothy soups? Yes please. Low Carb Soup? I. Am. In. Dump into the crock pot? Yessir. (Affiliate links follow – see disclaimer page for details.) The truth is, I’ve never had a soup I didn’t like. I have had soup I like better than others. That’s what this is all about.
The only equipment you really need is a good, sturdy pot. I prefer a Dutch-oven for soup: they come with a lid, and they can go in the oven if you need to melt some cheese. (Be still my heart.)
We just sent Baby Boy this Dutch Oven at school. It’s very sturdy, it’s a good size, and it comes in a multitude of colors! Plus, it won’t break the bank. Maybe I’ll get it back into our kitchen one day. That’s how I got my favorite cast iron skillet – we gifted it for Christmas and it moved back home!
Favorite Soups, in no particular order:
Potato Leek
This vegetarian favorite is creamy and filling. The leeks make everything better, and this is a super inexpensive dish! Check out our Holiday Open House Menu to see how it’s paired there.
Cajun Wedding Soup
Don’t get me wrong – I love a little Italian Wedding soup, but sometimes it’s fun to mix it up. This recipe does just that. It’s super meaty, between the Cajun sausage, the spicy meatballs and the tender chicken.
Mexican Corn Chowder
Throw some zest into regulation Corn Chowder with Mexican flavors. You can use fresh corn, but frozen is a very close (and much easier) substitution. This soup starts out vegetarian; add some shredded, cooked chicken (from a rotisserie chicken, perhaps?) to make this a full meal deal.
Ravioli in Broth
This family favorite was a staple on the table when Bert traveled every week. It’s ridiculously easy and hearty enough to fill all the tummies! Cheese Ravs, Beef Ravs, or specialty Ravioli are all perfect in this broth. Baby Boy thought the broth was butter for years. I almost hated to tell him that this was practically good for him!
Creamy Broccoli Soup for One
This soup is easy to make for a crowd, but it makes a nice, light meal for one – when you don’t want a mass of leftovers. The “creamy” in this vegetarian soup is from coconut milk, making for a good for you, low carb treat.
Sausage Split Pea
Yep. You read that right: Sausage. Not ham. We almost never have a ham bone in the fridge, but we always, always have sausage. We use spicy Italian usually, but turkey sausage would work well too. This is a hearty, stick to your ribs bowlful. You’re welcome.
Lasagna Soup
Oh my gosh, you guys. This one isn’t even my recipe – but I love it so much it made the cut. It tastes so much like Lasagna you won’t believe how easy it is.
Chicken Fiesta Soup
This is a full on dump soup. It uses canned beans, fresh chicken and a hearty splash of sour cream at the end of it’s swim in the slow cooker. This is a perfect meal to have waiting at the end of a long day. I like to serve it with corn chips for maximum crunch.
Buffalo Chicken Chowder
This is a little spicy – but not overwhelming in any way. The Blue Cheese Cream is a super easy little addition that takes the soup to the next level. Friday never had it so good.
Sausage Noodle Bowl
This is Baby Boy’s favorite – he’s a total sausage machine, after all. Make the noodles in a different pot so they don’t suck up all the broth. Bert isn’t a huge fan of noodles, so he subs in leftover rice. Also delicious!
