Cheesy Chicken for a fast, easy weeknight meal
Cheesy Chicken: Fully updated post, including a brand new, second recipe!
Isn’t trying to include Low Carb meals into a busy life time consuming? It’s tough to get everyone on the same page, and it gets boring fast. Good news – Cheesy Chicken or Cheesy Chipotle Chicken makes a fast, easy, Low Carb weeknight meal. It’s a family favorite in our house we created when we needed dinner on the table in a hurry.
Prep the chicken breasts and put them in a greased casserole dish (affiliate links follow – see disclaimer for details). Combine the topping ingredients (all three of them) in a small bowl. This picture shows the chopped chipotle, but that’s the only thing different than regular Cheesy Chicken.
Mix ingredients well and slather on top of each piece of chicken. No, it’s not pretty, but it ends well, I promise.
Pop it in the oven and get some sides ready – because it doesn’t take long to cook!
This is great with Bert’s favorite: Minute Rice and peas.
Combine it with with cauliflower rice for the true “low-carber”.
You can come home from work and have this meal on the table within the hour. It can be changed up too: check out the second recipe: try adding some pureed chipotle in adobo for a spicy, smoky switch up.
Add some Italian seasoning, switch out the cheddar cheese for Parmesan and serve it with spaghetti or zoodles, BOOM – it’s Italian!
Cheesy Chicken
Ingredients
- 4 each Chicken Breast, small Boneless & Skinless
- 1/2 cup Mayonaise
- 1/2 cup Sharp Cheddar Cheese grated
- 1/2 ea Onion, small grated
Instructions
- Preheat oven to 350 degrees and spray an 11"x15" casserole dish with cooking spray.
- Combine mayo, cheddar cheese and onion in small bowl. Place chicken in casserole dish and spoon mayo-cheddar mixture on top of each breast.
- Bake for 30 to 45 minutes (depending on the size of the chicken breast), or until chicken is cooked through and the topping is brown and bubbly.

Cheesy Chipotle Chicken
Ingredients
- 4 each Chicken Breast, small Boneless & Skinless
- 1/2 cup Mayonaise
- 1/2 cup Sharp Cheddar Cheese grated
- 2 - 3 ea Chipotle Peppers in Adobo chopped fine
Instructions
- Preheat oven to 375 degrees and spray an 11"x15" casserole dish with cooking spray.
- Combine mayo, cheddar cheese and chipotle in small bowl. Place chicken in casserole dish and spoon mayo-cheddar mixture on top of each breast.
- Bake for 30 to 45 minutes (depending on the size of the chicken breast), or until chicken is cooked through and the topping is brown and bubbly.
