Asian Peanut Noodles Easy and Fast

Asian Peanut Noodles are another ridiculously easy dish that makes dinner ¡POP!

Peanut Butter is our middle son’s “go to” for lunch. When I would apologetically explain that there was no deli meat (again), middle son would give a cheerful thumbs up for the Peanut Butter Sandwich. So it’s no surprise that these noodles are a favorite of his. Luckily his brothers like it too.

We like Asian Peanut Noodles best warm,

but they are awesome at room temperature or cold too. It makes for a perfect dish for those late nights of sports or work – it doesn’t need to be refrigerated, and can be ready to go when you are. Add some roasted veggies for a perfect vegan meal. These noodles also pep up simple proteins – we had it with grilled chicken, but it pairs well with pork chops and we serve it (a lot) with  Shredded Chicken Joes – because it’s a complete meal I don’t need to be around to serve. Perfect!

We also like Asian Peanut Noodles SPICY,

but that’s up to the chef. Add as much or as little of the crushed red pepper as you like. They are great either way.

Prep the pasta water according to the directions on the box. Cook the pasta as directed. We used fettuccine noodles here – they were in the pantry and they sounded tasty. There is enough noodle to hold up to the sauce too.

Meanwhile, combine all remaining ingredients in serving bowl (affiliate link).

How cute is that whisk? One of the boys, who shall remain nameless {cough – Baby Boy – cough} asked for an Easy Bake Oven (affiliate link) from Santa one year. Santa, being an equal opportunity kind of guy, brought one. And that tiny, pink whisk came with. The original Easy Bake Oven was eventually recalled. Apparently the light bulb burns were just too much for the lawyers to handle.

The price seems to have increased exponentially as well. Good times.

Anywho, combine all the sauce ingredients in the serving bowl (affiliate link)  and mix well. The “sauce” will be very thick at this point.

Scoop out about a cup of the pasta water and set aside. Strain the cooked noodles out of the water using this fabulous Steel Spider Strainer (affiliate link). You don’t need to completely drain the noodles because the pasta water becomes part of the sauce.

Add about 1/2 cup of the pasta water right on top of the noodles and peanut butter mixture.

Add more pasta water if the sauce is too thick for your preferences. Mix everything well and enjoy!

Ingredients

  • 1/2 box Dry Pasta (1/2 pound), like fettucine, spaghetti or soba
  • 1/2 cup Peanut Butter, smooth or chunky
  • 2 tbsp Soy Sauce, low sodium if handy
  • 1/2 tsp Garlic Powder
  • 1 tsp Red Pepper Flakes (to taste)

Instructions

  • Heat water to a boil in a large pot and cook pasta according to package directions.
  • While pasta is cooking, put peanut butter, soy sauce, red pepper flakes and garlic powder in serving bowl and stir well with whisk.
  • Drain pasta, but retain 1 cup of pasta cooking water. Add pasta to Peanut Sauce and add about 1/2 cup of pasta water. Mix well using wooden spoon until mixture is homogeneous. If the peanut sauce is too thick, add more pasta water.
  • Serve warm, cold or in between.
