This fabulous recipe is a great treat as an appetizer for an Italian meal, or as a main course served over rice. It can be as spicy or mild as you like.

- 3/4 lbs Italian Sausage, hot or mild
- 5 -6 small Peppers: banana, jalapeno, baby sweet peppers
- 1/2 cup Marinara Sauce
- 1 cup Mozzarella Cheese, shredded
Preheat oven to 375 degrees.
Remove sausage from casings if necessary, and brown in a skillet, breaking up while cooking.
Meanwhile, cut peppers in half lengthwise and remove seeds. Spray baking dish with cooking spray and lay cut peppers in a single layer across bottom.
Strain fat from cooked sausage and discard. Add marinara sauce to skillet and allow to cook for a few minutes to meld flavors.
Spoon sausage mixture into each pepper. Sprinkle mozzarella liberally across stuffed peppers.
Bake in preheated oven for 15 to 20 minutes until cheese is melted and beginning to bubble. Serve immediately.
