Ingredients

  • 3/4 lbs Italian Sausage, hot or mild
  • 5 -6 small Peppers: banana, jalapeno, baby sweet peppers
  • 1/2 cup Marinara Sauce
  • 1 cup Mozzarella Cheese, shredded

Instructions

  • Preheat oven to 375 degrees.
  • Remove sausage from casings if necessary, and brown in a skillet, breaking up while cooking.
  • Meanwhile, cut peppers in half lengthwise and remove seeds. Spray baking dish with cooking spray and lay cut peppers in a single layer across bottom.
  • Strain fat from cooked sausage and discard. Add marinara sauce to skillet and allow to cook for a few minutes to meld flavors.
  • Spoon sausage mixture into each pepper. Sprinkle mozzarella liberally across stuffed peppers.
  • Bake in preheated oven for 15 to 20 minutes until cheese is melted and beginning to bubble. Serve immediately.
