WEEKLY MENU 12.01.24
Our Weekly Menu 12.01.24 is the first in the official Christmas Season – Thanksgiving is behind us, and we’re charging full steam ahead towards Christmas.

Portland Head Light is a historic lighthouse in Cape Elizabeth, Maine. The light station sits on a headland at the entrance of the primary shipping channel into Portland Harbor, which is within Casco Bay in the Gulf of Maine. Completed in 1791, it is the oldest lighthouse in Maine. The light station is automated, and the tower, beacon, and foghorn are maintained by the United States Coast Guard, while the former lighthouse keeper’s house is a maritime museum within Fort Williams Park.
I adore lighthouses and what they represent: they are silent but mighty, always shining brightly. That’s some life goals right there! This one is also decked out in Christmas colors, which is a total win.
Jumping right into the food for the Weekly Menu 12.01.24~
We’re taking a complete 180 from beautiful Thanksgiving food (and leftovers, leftovers, leftovers) for Sunday Dinner during the Weekly Menu 12.01.24. Wait for it… we’re going Mexican. We’ll start with an excellent cheese dip-laden bread bowl that is spiced up a little with some chipotle peppers. (Queso Bread Bowl with Chipotle) Chipotle peppers are in a can from the Mexican food aisle. They are smoked jalapenos and are crazy flavorful along with being a teeny, tiny bit spicy. Yum.
Chicken Enchiladas Suizas are fancy enough for a dinner party, but they are ridiculously easy, even though they have a lot of ingredients. You can substitute rotisserie chicken and a packet of taco seasoning for all the spices, although you’ll likely have most on the spice rack.
Cumin is very different than the tastes we’ve been enjoying!
Sunday dinner would also go great with a Paloma Cocktail or two. Bert thinks I’m being optimistic with a dessert that isn’t leftover pie, but technically, we’re using leftovers here, too. The Cinnamon Ice Cream is plain vanilla (that we bought to go with pies!) sprinkled with a fair amount of cinnamon powder and stirred well. Obviously, pie is also on offer.

Monday we’re going straight comfort with plain Jane cheeseburgers prepped in our favorite ginormous cast iron skillet. Some shoestring fries, Sweet & Spicy Carrots and we’re ready for eats in less than half an hour.
Bert is OOT for a night or two this week, so we’re having back-to-back pasta. He’s not a big fan of noodles, so they hit the menu when he’s not here. I know! It’s crazy. Our One-Pan Sausage Orecchiette is easy and fast and actually only uses one pan, so cleanup is a breeze. I’ll make a minuscule amount of broccoli, as I’ll be the only one eating it. Ahem.
The Ground Beef Ramen is a new to us recipe that is also a one-pan wonder. It uses a couple of packets of Ramen noodles, a fair amount of veggies, ground beef and a fun little sauce. We’ll discard the flavor packets, because we’re fancy like that. It’ll be ready super fast, though, as Ramen does.
Chicken Fiesta Slow Cooker Soup is up for Friday. Since there are so many, I try to use as many no- or low-salt canned items as I can find in this. It’s delicious even if we need to hydrate in anticipation.
