Our Weekly Menu 11.08.20 is full of delish dishes for dinner. We do eat at other times during the week, though. Sunday Brunch is a special treat. It came about organically around here, because the Boysies have a relatively new-found love of Formula 1 Racing. The races tend to be on Sunday mornings, which led to lazy, easy brunches, served in front of the television.

What exactly IS Formula 1?

Formula One (also known as Formula 1 or F1) is the highest class of international single-seaterauto racing sanctioned by the Fédération Internationale de l’Automobile (FIA) and owned by Liberty Media, an American mass media company, through its wholly owned subsidiary, the Formula One Group. The World Drivers’ Championship, which became the FIA Formula One World Championship in 1981, has been one of the premier forms of racing around the world since its inaugural season in 1950. The word “formula” in the name refers to the set of rules to which all participants’ cars must conform.[1] A Formula One season consists of a series of races, known as Grands Prix (French for ”grand prizes’ or ‘great prizes”), which take place worldwide on purpose-built circuits and on public roads.

What does this mean for brunch? The races are international, and Erieland is in the Eastern Time Zone. Sometimes the races are on at 9 am, sometimes 10 am and occasionally even later. Once in a while they’re on at 7 am. Brunch doesn’t happen those days.

Rule for Brunch

Our middle son, “D”, hates eggs with a fiery passion. So anything I make for brunch has to either not include them at all, or have an option that doesn’t add them. (Or I can hide them – see the Stuffed Fireball French Toast Recipe. Shhhh.) Other than that, all bets are off. Any breakfast, lunch or bar food is on the table, metaphorically. And I like to use leftovers if I can. We seem to always have ham…

Buffalo Potato Skins

I microwaved the potatoes until they were tender, then brushed them with a little melted butter and broiled them. Leftover chopped chicken was tossed with Frank’s Red Hot before topping the spuds. A little sour cream and we were ready to eat.

I was out of cinnamon, so I added Fireball Whisky to the egg mixture instead of vanilla. Oops.

Waffled Hash Browns

Hash browns stuffed with ham and cheese and “Waffled”. They cooked for 15 minutes and were ah-maz-ing. These ones were inspired by a recipe I saw on the Pioneer Woman. I thawed frozen hash browns in the fridge overnight, then added a layer to a heated, and heavily sprayed Belgian waffle iron. (Affiliate links follow – see disclaimer page for details.) Stuff in ham and cheese then top with another layer of hash browns. Cook for about 15 minutes. Mix hot sauce and ketchup for a great accompaniment.

I love Sunday!

We have a big Sunday dinner too – so brunch needs to be hearty enough to hold everyone until dinner. On the Weekly Menu 11.08.20, we’re having family favorite Chicken Cordon Blue. I like to switch out the swiss cheese with a little bit of soft herb cheese, but otherwise follow the recipe pretty closely. It takes some time, but is so worth it.

What are “Packet Tacos”? They’re regulation ground beef tacos made with the packet that comes in the box. Sometimes, nothing else will do.

I make individual Fried Rice. Our oldest is not a fan of soy sauce (what!?!?!?) and “D” won’t eat eggs, but Bert loves them. So I warm up the wok and get cooking. I’m a big fan of Tamari, which is a gluten free soy sauce. I think it’s much less salty with all the great taste of regular soy sauce. Definitely give it a try next time you stock up. I assemble all the fried rice ingredients first, so when the wok is hot, I’m ready to cook. The fried rice doesn’t take long. It’s a perfect last minute weeknight meal. And much cheaper than take out.
