One of my favorite holidays is finally here: Halloween! Time for some fun, maybe a party, and for sure some creepy eats. Weekly Menu 10.25.20 has it all!

I take Halloween Seriously!

This year promises to be different though, as with everything else 2020 has to offer. We don’t usually get many trick or treaters, but we’ll leave on our porch light and stock up as though we’re going to be inundated. Will we get ANY trick or treaters? Only time will tell. No worries though – the candy won’t go to waste. Plenty of leftovers for our at home crowd!

Our weather has been a little ridiculous lately. We had record highs yesterday of 80+ weather. Then a cold front came through, and the temps plunged. We’re hoping for a high of 48 degrees today. Truly weird.

One might even say Eerie.

We’re starting the week with a total comfort meal. Chicken and Dumplings scream cozy, which we need. Bert complains about the Baked Fontina because it’s a little rich and filling. Practicing a little bit of moderation there will cheer him up a bit: maybe I’ll make half. (Ha! As if.) With all the candy in the house, we may or may not actually have cinnamon ice cream on Sunday night. All the fixings will be in the house though.

We just sprinkle cinnamon (copiously) on top of vanilla ice cream or frozen yogurt then stir it up. A little bowl is very refreshing. I love cinnamon.

The crockpot is busy this week, my friend.

We’re pushing it into service on Monday and again on Thursday. Cajun Crockpot Red Beans and Rice is a family staple – and it’s perfect for a busy Monday. It smells fabulous bubbling away all afternoon, and is a perfect bowl of goodness for a meatless Monday. Did I mention it’s a cheap meal too?

On Thursday we’re having a very fall like dinner: Pork & Cider Stew. The recipe looks super easy, and a mix of sweet and savory should warm us right up.

Saturday it’s finally Halloween Party Time!

This year, we’re probably not going to have a huge soiree. Some ssssausage “snaky” sandwiches and goulish looking Red Pepper Pasta will keep us fed while we run to answer the trick or treaters. In the old days, the boys enjoyed a healthy meal of hot dogs (cut to look like octopus) on top of blue food colored ramen before going out to brave the neighborhood. Halloween dinner has grown up!
