Holy guacamole, Batman! It’s National Taco Day during the Weekly Menu 10.02.22~
You read that right: National Taco Day is October 4th, and it falls on Tuesday on the Weekly Menu 10.02.22. How serendipitous is that? I just have to say it. Can there be any more perfect food than Tacos?
You can make them with just about anything! This week we’re going to spice up some Pop’s Crispy Chicken with smoked paprika, chili powder and cayenne. We’ll sprinkle that liberally after we add the oil but before we toss in the panko breadcrumbs.
We’re doubling down on tacos for this auspicious occasion and having regular packet tacos too. I might just buy a Taco Dinner Kit, which is easy, fabulous and perfect every damn time. (Affiliate links precede and follow – see Disclaimer Page for Details.)
But let’s talk about fabulous alternatives, and the reason that I adore tacos.
Pretty much everyone does. Right?
Fish Tacos. Blackened and Grilled or battered and fried, there is no other taco insert that is so tender. Firecracker coleslaw works as a topper, but so does a nice Crunchy Ranch Broccoli Slaw.
Regular Chicken Tacos are a family fave – and they’re just chunked up chicken breasts that are quickly sautéed and sprinkled with taco seasoning or chili powder, cayenne and a bit of salt. Any type of cheese can be used, but I love shredded Monterey pepper jack. A little spicy, but not too crazy. We’re not a chicken thigh family (I keep trying but they just don’t go over very well) but they would work wonderfully here too.
Vegetarian Options are everywhere. Veggie Tacos run the gamut from Black Bean & Corn to Potato Tacos. (And how bad could that be?) Any veggie that can be grilled would be a great addition to a fabulous taco shell.
Don’t even get me started on Breakfast Tacos. See what I mean? Tacos may just be the most versatile dish out there.

We’re going old school comfort foods for our big dinner on Sunday during the Weekly Menu 10.02.22. Chicken Cutlets served with creamy gravy and mashed potatoes sounds like a typical Southern meal, doesn’t it? I saw a recipe for Pumpkin Sugar Cookies and have been putting it off until October, but we’re finally there, baby!
We’re using the “industrial” (premade frozen) meatballs in the Double Stuffed Shells on Monday. They’re stuffed with creamy dreamy cheese and the ‘balls, which makes for a satisfying twofer. Paired with some garlic bread and an easy salad with Creamy Parmesan Dressing it takes Monday eating to new levels, easily.
We’re rounding out the Weekly Menu 10.02.22 by getting back into the swing of soup season. Spicy Italian sausage adds a delicious twist to our Split Pea and Sausage Soup. Of course, this recipe was born out of necessity – I didn’t have any ham or ham hocks, but we did have sausage in the freezer. Boom – new favorite way to make it. I never make it with ham anymore, even if we have some. Yum.
