Easy, breezy Weekly Menu 08.16.20 has family favorites and plenty of sausage for Baby Boy’s last week at home before school starts up.
I feel like Baby Boy just got home – but he’s actually been here since he came home for spring break and stayed. And stayed. He is super ready to get back to school, which will be a hybrid of online and in person classes. It makes me a little nervous, all things considered, but it is TIME.
We’re paying homage to Baby Boy with a couple of his favs, and with the Sausage Machine (it was ‘achine, back in the day) any ground, spiced meat counts.
The word “sausage” can refer to the loose sausage meat, which can be formed into patties or stuffed into a skin. When referred to as “a sausage,” the product is usually cylindrical and encased in a skin.
Cooked smoked sausages are cooked and then smoked or smoke-cooked. They are eaten hot or cold but need to be refrigerated. Examples include kielbasa and mortadella.

We’re taking a multi-prong approach: loose or “bulk” sausage in the Stuffed Pepper appetizers on Sunday, cooked kielbasa on our ridiculously delicious Polish Boy Sandwiches on Monday, and roasted regulation sausage on Thursday. We could switch in some chicken or turkey sausage, but our normal go-to is ground pork. Yummy.
We’re eating other things too!
Bert is slow grilling an eye of round on Sunday – he’ll moisten it with Worcestershire Sauce and liberally add on the dry rub. We’ll have lunch fodder for days! (Affiliate links follow – see disclaimer page for details.)
We’ll use our trusty cast iron skillet for the fish tacos on Tuesday. Tilapia cooks fast after we season it well with chili powder and a pinch of cumin. We’ll add some chicken to another skillet for the boysies that don’t like fish.
