We’re dropping one of the boysies off at school during the Weekly Menu 08.14.22, unofficially starting the countdown to fall.
We’re dropping off Baby Boy at school during the Weekly Menu 08.14.22. It’s hard to believe he’s been home since May. It’s been glorious having him here, but he is READY to get back to college. He goes to The Pennsylvania State University (WE ARE!), and this is is senior year, which is crazy! We’ve got to plan a football weekend visit, which we haven’t done yet during his career there. (Thanks, Covid.) We’ve already got plans in place for graduation, and there are a myriad of other must-dos that we’re looking forward to this school year.
Baby Boy is the first of our boys to actually live in an unfurnished apartment. The OG Baby Boy got to reside in what his father and I referred to as several “Taj Mahals” at RIT. These fully furnished apartments had four bedrooms, four bathrooms and pretty nice communal furniture. Much nicer than our first house.
D went to Loyola University Maryland, and lived on campus all four years, as his college was pretty much in the middle of Baltimore. His apartments weren’t super nice, but they were fully furnished and completely functional for four guys living together.
Baby Boy is living in an unfurnished bachelor pad.
I’m starting to understand why my mother wouldn’t let us move any of our college furniture back into the house. I also realize how nice we had it with Baby Boy’s older brothers. Buying furniture in lovely Erieland and transporting it to State College isn’t something we’re equipped for. They do have furniture rentals at Penn State, but the renter must be physically present to rent, and Baby Boy didn’t get a chance to get there before he left in May. We don’t know if they’ll have anything available once he gets back to school.
We’ve got a desk he can disassemble and actually fit in the car, and his roomies are bringing a desk chair for him as well as a couch. Maybe a table? We’ll have to see when we get him there. (Affiliate links follow – see Disclaimer Page for details.)

We’re shipping a bed. And a dresser of sorts. (Remember when milk crates were “free”? Not anymore.)
Baby Boy has been instructed NOT to bring any of this stuff home. Maybe he can sell it at the end of the year? Fingers crossed that his bed arrives before he does. But that’s what sleeping bags are for. Right?
Of course, he’s mostly outfitted with kitchen stuff, since he did live in on campus apartments the last couple of years, although he was on the meal plan. He has his most favorite cookbook ready, and I’m gifting him our smaller crockpot (so I can get a new one). I wrote this book when the OG Baby Boy moved into his first apartment, and it’s full of easy recipes that are perfect for beginner cooks. And anyone that likes fast meals.

Weekly Menu 08.14.22
Baby Boy isn’t heading out until later this week, so we have time to make a couple of his favorites before he hits the road. We’re coming off the BYO Lobster/Steak feast on Saturday, so Sunday is a nice light meal. Baby Boy loves salmon, but his older brothers? Not so much. He’s also not likely to cook it at school. He will make the Sausage Orecchiette – he is a sausage machine, after all, and this recipe is super simple.
Crispy Chicken Clubs are a full family favorite. I’m pairing them with fries (of course) and a new favorite thing of mine: Baby Kale Salad. I keep trying kale because it’s the new darling of the green eating set, but I hate it. Yuck! And then I happened upon baby kale. It’s simply fabulous. It’s still a little bitter, but in a good way. The texture is much better, and it takes well to a little massaging. If you see some at the grocery store, give it a shot.
