Our Weekly Menu 07.05.20 allows ample time to get out of the kitchen and into the great outdoors for this first full week in July.

One of the best parts about summer eating is how simple it is. There’s something so satisfying about a piece of meat grilled perfectly with just salt and pepper to enhance it. Add in the produce that is starting to come at the farm stands and a feast is in the making.

Once of our long standing, super easy dinners is on the horizon this week: Grilled Chicken – Garlic Alfredo. The Alfredo Sauce is another example of a simple sauce with only four ingredients. All things in moderation fits in well here: the sauce is a little bit decadent, but we serve it with straight up grilled chicken breasts, no added oil or ingredients beyond S&P.

I’m not making pasta.

But I will spiralize some zucchini to serve with the sauce (affiliate links follow – see disclaimer page for details). I’ll boil up a box of fettucine or linguine noodles. I won’t mix the zucchini in with the fettuccine, although it would be delish. I’m pretty sure the boys would completely revolt. Summer squash is a tough sell around here, although the Caesar salad is a huge hit, and we’ll have a big wooden salad bowl full of the stuff as a side.

We’ll keep the veggies coming with Naan Pizzas on Saturday~

Everyone gets to make their own, so in addition to cheese, pepperoni and sausage, we’ll have onions, bell peppers, mushrooms, and tomatoes for everyone to pile on their own naan bread.

We’re having Sloppy Joes on Thursday – but we have plans early evening, so I’ll prep them early in the day and pop the meat into the crock pot to stay warm while we’re out. When we get home, we’ll make the sandwiches and be eating within minutes of getting there. A little planning makes for some very happy tummies. Sandwiches are perfect for summer eating. The grocery store has so many healthy and tasty options for bread and rolls now. No more soft white rolls – unless we want them!

If you don’t have plans like we do, try Sloppy Joe Sliders – they’re super easy and filled with standard Sloppy Joe Meat. Everybody loves little sandwiches – it’s a party in a bun!
