Our Weekly Menu 06.16.24 includes a big, shouted, “Happy Father’s Day” to all the dad’s out there! As of January 2022, it’s estimated that there are approximately 72 million fathers in the United States. This figure includes biological fathers, stepfathers, adoptive fathers, and any other father figures. The number may have changed slightly since then due to population growth, but it gives a rough estimate of the total number of fathers in the country.

The boysies have a great dad, too – how are we celebrating Bert? At his favorite place. Bert isn’t much of a chain restaurant fan, with the notable exception of The Texas Roadhouse. He adores that place, but he doesn’t eat the steak. Nope. His go-to is the Chicken Critter Salad, which is basically yummy chicken tenders on a bed of lettuce smothered with honey-mustard dressing—nothing to scoff at, certainly

Of course, the real star of any meal for Bert is the dessert. This year, he’s requested a perennial favorite: Italian Cream Cake. It’s got some of his favorite ingredients, including coconut, walnuts, and cream cheese. It’s super moist and delish.

International Picnic Day falls on Tuesday~

Another notable day during the Weekly Menu 06.16.24 is International Picnic Day.

History of Picnic

Although there are no records about the exact origin of International Picnic Day, it is believed to date back to the end of the French Revolution and Victorian Era. Taking breaks to eat from hunting is often associated with picnics, dating back to the Middle Ages. 

In the eighteenth century, the English began referring to outdoor meals as picnics.

The term “picnic” is borrowed from the French term “pique-nique” which means social gathering where people bring their own food and eat together in nature. It was like having a potluck outside in the open.

Picnics became popular across the globe during the French Revolution, as the French elite introduced this tradition to other countries. 

It became more popular in France after the French Revolution in the 1800s and in England during the 20th century. This tradition likely made its way to America through British immigrants during the Victorian era.

We eat on the patio a lot during the summer, but in order to make it a picnic, I feel like the food needs to be packed up in a basket, and, preferably, served on a blanket. At the very least, the participants need to be sitting on the ground. The post pic drags some pallets into the mix, but that is very fancy, and certainly not required.

Many years ago, I applied for a credit card solely for the welcoming gift of a fully outfitted picnic basket. I don’t think we ever used it for the intended purpose, but I loved that thing.

Is it any wonder? How cute is that basket? I think any basket would work – in a pinch, a grocery bag would suffice. I love these little Chinese take out containers, too. Individual servings makes for a very easy dinner on the blanket.

WEEKLY MENU 06.16.24

We’re taking Ham and Bacon Sandwiches that I’ll wrap in wax paper for a little bit of nostalgia, and Roasted Red Pepper Pasta in the go-to boxes. Instead of spaghetti, which might get unruly and challenging to eat without constant chin wiping, I’ll use a short pasta that we can spear. Way back in the day, my Mom used to pack popcorn in our lunches when she ran out of chips. All my classmates clamored for a few pieces. We’re incorporating that into Picnic Day too – via Sweet & Spicy Popcorn. I’ll make enough for everyone though.

Strawberries will be the finale for a bit of sweetness. Don’t forget the forks and napkins!

The weather this coming week is supposed to be beastly hot. Monday dinner is rotisserie chicken and leftover rice rolled into a comfort food casserole that needs minutes to cook, keeping the kitchen cool. We’re getting the crockpot out too.
