Weekly Menu 05.05.19

How better to start the week than with a party? Ole!

Our Weekly Menu 05.05.19 gets a great start with Cinco de Mayo. We have a party menu here, but also include an easier, family dinner more suitable for a fun (easy) Sunday night at home.

Mexican food is perfect for celebrating with a crowd.

But it’s much more than that – it can be easy going, or it can be elegant. Try the Chicken Enchiladas Suiza for some non-traditional fare. Or add this awesome Mexican Chopped Salad to the menu – it’s delicious and elegant.

This Sunday Dinner is middle of the road.

Tostados are basically open faced tacos. We’ll add re-fried beans, pico de gallo and cheese to bump them up and individualize them. Everyone gets to make their own – similar to Friday night when we are having make your own pizzas.

Picky eaters abound.

We have a fairly picky group of eaters here at home, and I don’t think we’re alone. I always cringed when the other mothers talked about their kids eating veggies and fruits with abandon. We had a kid sit at the dinner table with a SINGLE pea on his plate for over two hours one time. (I know, I know. That was a total mothering fail.) Now he eats them, but he still swallows them whole with a glass of water. Don’t get me started on fruit.

Our Weekly Menu 05.05.19 is full of kid friendly meals.

I’ve always made meatloaf without any chunks because the boys would just spend time picking them out. My Mom used a blender to grind onions super finely with a little water before adding to meatloaf, but I’m more of a powdered spice add-er. The meatloaf this week has a full tablespoon of Montreal Steak Seasoning to set the stage for a tasty loaf.
