Weekly Menu 04.13.25 is loaded with the kind of meals I wish we had when we skipped Easter dinner for a panic attack at the Grand Canyon.

Why are we sticking around beautiful Erieland for the Easter Holiday? Many moons ago the five of us traveled to the stunning Grand Canyon during Easter break from school. Bert and I had been out to Arizona and fell in love with Sedona. We knew the boys would enjoy it too. But being that close to the Grand Canyon pretty much required a trip there, too. We stayed at the Grand Canyon Railway and Hotel in Williams, Arizona. The hotel was perfect, and it was located right next to the Railway Station.

The Grand Canyon scared the bejesus out of me. We got there via the very fun excursion train. The terror began once we got off the train and started moving about and viewing the vistas. We had three rambunctious boys wandering about the place, and the Grand Canyon people had obviously forgotten to put up barriers – anywhere!

Feel like creeping ever closer to the edge to, perhaps, grab a great pic? Sure! Go right ahead.

Yeah, yeah. Ignore the Canadian Tuxedo I’m styling and look behind us to see what was not there. We were admittedly ten feet or so from the edge, but STILL. One wrong move…
I spent most of the time herding and the rest of the time looking at the enormous hole in the ground. We were there for three of the longest hours of my life. Luckily, the boys looked forward to the ride back on the train and were ready to go when it was time. (Honestly, the train was the highlight of the Grand Canyon experience for me.)
Scary times were had on the train, too!
Okay. Not really. But we DID get stopped.



We spent Easter Sunday traveling back to Phoenix to catch our flight, but we were able to get mass in at Williams, Arizona. The priest was young and very peppy, but the church was in a brand new building that didn’t look much like the Saint Peter Cathedral we were used to seeing. Plus, the Easter Bunny was not able to locate us. We told the boys this would likely happen before we headed west. They were okay with it before the trip. On Easter morning? Not so much.

I’m not going to lie. It was a great trip. But if I never saw the Grand Canyon again, I would be just fine. And we all agree that there is nothing like home sweet home for the holidays. Any of the holidays.

Weekly Menu 04.13.25
The Weekly Menu 04.13.25 starts out with an easy chicken dinner that has an Italian flair but is absolutely not traditional. Pepperoni Pizza Chicken is stuffed with sauce, cheese, and, of course, some pepperoni. We’ll have some Sweet Crostini to start, keeping the Italian theme going. Carrot Cake is on the dessert cart because A. We have half of one in the freezer from Bert’s Birthday and 2. We have (almost) back to back birthdays during April, and one of them falls on Easter Sunday.
D, the Birthday Boy, has requested his favorite meal for next Sunday, so we’re skipping the traditional Easter Dinner. More on that during next week’s menu.
The Railway Hotel had buffet service in the dining room for all the meals that we were there. Buffets are a real favorite of our diner boys! You know what else is a real fave? Yep. Standard fare. That’s why we’ve got Bangers and Mash, as well as a fried chicken sandwich on the Weekly Menu 04.13.25.
Pancake Dinner, Baby!
Our Weekly Menu 04.13.25 has one of my most beloved family meals. Growing up, we decorated Easter eggs in the afternoon of Good Friday, followed up with a fantastic pancake dinner. Mom made pancakes and kept them coming until everyone was groaning from over-eating. Then, she’d sit down and have a pancake or two for herself. Mom made hers “German style” – she’d spread a thin layer of softened butter over the pancake, sprinkle with granulated sugar and roll it up. It was (and still IS) the very best way to top a pancake. I’ll put out the maple, blueberry and raspberry syrups too, but they won’t get near as much action.
Best option for cooking a whole mess of pancakes is a cast iron griddle you can put over two of the burners on your stove. Bonus – the other side is a grill pan. Don’t forget The Ringer – cast iron chain mail cleaner. It is worth every penny.
