We’ve been walking the neighborhood every day now. The sheer number of birds is pretty impressive. Because the leaves haven’t popped yet, you can see (and hear) the birds everywhere. We’ve got two places on our house that are “hot-spots” for nests: on the top of the light over the garage and on top of the patio light. Neither light is lit all that often, but maybe they give off some heat?

We’re hoping for better results this year with the robin eggs. We’ve had some mean jays in the past. Sigh.

Weekly Menu 04.05.20 deets…

It’s Good Friday this week. Normally we’d visit a couple of churches and walk the Stations of the Cross, but I’m not sure if the churches will be open. Either way, watching Easter Mass on TV will be different, that’s for sure!

One Easter tradition that will persevere is the coloring of eggs and the Good Friday Pancake Dinner.

Look how happy they look about coloring eggs! I’m less than pleased with the “Gold” egg color. I’m not sure what I expected for $1.49.

A favorite among the boys is Pancake Good Friday Dinner. Another throw back to growing up, I make pancakes and serve them up to the boys while they sit at the counter, fork in hand. They eat them as fast as I can make them. I use a recipe from Joy of Cooking (affiliate links follow – see Disclaimer Page for details), which is super simple, but Bisquick is a viable and quick option as well. As an aside, if you only ever buy one cookbook, it should be Joy of Cooking. As a reference manual alone it is unsurpassed.

My mother ate her pancakes “German Style”. I don’t think that’s official or anything, but she was of German Heritage, and that’s what she called them: smear a fair amount of butter across the entire pancake and sprinkle copiously with sugar. Roll it up and enjoy. YUM.

We’re trying Easy Ground Beef Wellington for Sunday dinner.

I found some puff pastry in the freezer and wanted to use it up. Since I’m the only mushroom aficionado around here, I’ll use caramelized onions for the base. I’ll add an easy Beef Gravy to top it off.

The Steak Salad was on the menu last Saturday, but we took a break from cooking and supported one of our local restaurants with a (hefty) take out order. This cook was thrilled. The Grilled Steak will be cut and tossed with an easy salad and our Cheddar Cheese Dressing. The dressing is similar to Blue Cheese Dressing but a whole lot milder and kid friendly.

    • There was a run at the grocery store on puff pastry (who’da thunk?) so I subbed in puff pastry cups and ended up with open face Wellies. The flavor was awesome and everyone enjoyed the presentation, such as it was. Looking forward to trying them for real when things settle down.
