Our Weekly Menu 03.31.19 starts out with a bang with a tasty, easy Sunday night dinner meant to indulge. The fact that it’s loaded with Low Carb goodness is just a plus.
I don’t usually order steak out
– there are so many menu options that going for a (usually) pricey steak isn’t a go to. Indulging a bit with a perfectly cooked steak at home, though, works every time. I use my trusty cast iron skillet (affiliate link) and let it warm up on medium high for at least 5 minutes before adding a little bit of olive oil and the steak. Then the hardest part begins: LEAVING THE STEAK ALONE. If you can do that, you get a nice sear on the outside. If it is at all resistant to moving, it’s too soon. Wait another minute or two.

A few years ago, we visited my sister-in-law on a Friday during lent. She served Pierogi Lasagna, and I was hooked. Any time you have the option of combining pasta and potatoes you should take it. Add in onions and cheese? Um, yes please. The only surprise is we don’t have it more often.
