Saint Paddy’s Day falls on Sunday during the Weekly Menu 03.17.24~

Weekly Menu 03.17.24 starts with the big day: Sunday is Saint Patrick’s Day, although most people of good taste will celebrate it for several days before. It’s not quite as much fun as it was back in the day, but it’s still a great day to honor all things Irish. The food is good old fashioned comfort, and the cup of cheer served with it sets the mood for a happy, easy party.

I’ve mentioned it before, but I come from a largish Catholic family. Four girls and four boys was DOLD’s idea of planned parenthood. Mom was German in heritage, and Dad was Irish. A mixed marriage, if you will. The two ancestries hold many of the same traits, but vary in the biggies: Mom was more stoic and reserved, and Dad… wasn’t.

Mom identified her children as either German or Irish, with little mixing of the two. I thought that was a bunch of hooey until I had my DNA tested. And found out that instead of being a 50/50 split, my DNA is about 67% Irish. Turns out that Mom was right – at least about me.

I identify as Irish.

My beer of choice is Guinness, potatoes are my spirit food, and my most favorite place in the whole world is Ireland. This week was made for me.

A little story about the post picture~

It’s of Cobh (pronounced Cove) Ireland. We decided to visit it when we were in Ireland because it’s beyond picturesque, obviously. Bert was driving, masterfully as always, and I was doing a piss-poor job of navigating. In addition to telling him to go right when I meant left (that driving on the wrong side of the road really messed with my head) I didn’t understand some of the icons in the Waze app. When we bottomed out at the ferry it was a total shock to both of us. And one that neither of us wanted to tackle. Can you even imagine trying to get the manual car perfectly situated on that thing?

Thanks but no thanks.

So we changed the destination and the route and ended up in Waterford. Where, because of a series of events, (beginning with an off-putting odor in our originally reserved room) we ended up staying at the absolutely gorgeous Waterford Castle Hotel. Which, naturally, we had to access via ferry. You would think that the website description: “Waterford Castle Hotel & Golf Resort is set on an enchanted 310-acre Private Island” would have tipped me off, but again, navigating is not my strong suit. A girl scout I am not.

Weekly Menu 03.17.24

We’re going light on Sunday night for dinner – it’s been busy and a sandwich sounds good. Especially with some Totchos – which are basically nachos made with tater tots. Aaah, yes please. It’s a perfect night for an easy dinner party though – and this would be our plan in that case:

SAINT PATRICK’S DAY DINNER

Chicken Fra Diavolo made the cut on Monday – it’s D’s favorite, and it’s been too long. We’re going super simple “Packet Tacos” on Tuesday. Because a little crunch sounds like fun. We’re stealthily incorporating the always thrifty pork into made to order Fried Rice on Wednesday. Some of us like eggs, some like peas added in, and some like the rice super spicy. So I’ve always made individual helpings. Luckily they come together very speedily once everything is chopped (or slice) and at the ready. I use a wok because I’m fancy like that, but a 12″ cast iron skillet would work just fine.

We’re going crunchy again on both Thursday and Friday with Pops Crispy Chicken (on a super-healthy salad) and Fried Fish on Friday. Next week is the final Friday in Lent and we’ll have pancakes, as per usual. Stay tuned for that feast.

Ignore the “PI Day” notation on Thursday. If you’ve been following along, you’ll know that was from last week. Typo and it stays. Oops.
