February is in full swing during the Weekly Menu 02.04.24, so we’re embracing all the things that make it so special. For a month that is only shorter by a few days (and less so this year, with it being a leap year) it sure does fly by. Maybe it’s because we’re coming off the loooongest month of the year with January. And I know it’s not any longer than the other 31 day months, but man. It’s always a little relief when we close the door on January.

Maybe February flies by because of the Super Bowl and Valentine’s Day. Yeah. That’s probably it. They aren’t super duper “holidays” but they are something easy to plan and look forward to. Super Bowl is next week, and the menu has been fully updated for the re-match between Kansas City and San Francisco. HOW TO HOST THE BEST SUPER BOWL PARTY

I’ll be cheering for Kansas City, as I imagine many women that don’t have a team in the bowl will be. Why? Taylor Swift sightings, baby. I am not personally a huge Swiftie, but I love following along with this cute romance she has got going on. And I have no idea why anyone (mostly football loving men) are so bothered by seeing her cheering on her man. If I were the NFL, I’d capitalize even more on one of the most successful women in the world crossing over and bringing all her followers with her.

I’ve been hearing rumors that she’s going to make a surprise appearance at the half time show. Fingers crossed!

Now the Super Bowl Menu has been updated to reflect what each team’s locale is famous for, but I can’t guarantee we’ll be having Mission Tacos or Ghirardelli Hot Fudge Sundaes. I am a purist all the way through, and I adore a hot dog bar for the big day. Maybe a crockpot full of creamy Potato Leek Soup? And Peanut Butter Chocolate Chunk cookies may be on my horizon.

Valentine’s Day is coming….

It’s probably time to start thinking about Valentine’s Day too. It’ll be here before you know it. We’ve never been huge contributors to the commercial machine VDay has become. Most years Bert and I agree that Hallmark Cards are a big old waste of money, and if we are going to exchange cards, we’re hitting up the Dollar Tree instead.

And we don’t have to buy any packets of cards that no one want to fill out and take to school anymore, thank goodness. But we do have a plan for the big day. Actually, we have a couple four:

Any one of those options (or a combo) will make the day special without breaking the bank.

Weekly Menu 02.04.24

What’s for eats on the Weekly Menu 02.04.24? We’re dealing with the cold by going with comfort food to start out. Bangers and Mash are the easy and frugal main course. Our appetizer is soft cheese and pretzels, which will be delightful in front of the fire. And we’re finishing up with a dessert that will be almost entirely made from pantry ingredients.

We have a leftover pie crust in the freezer, so that’ll come out to play. I’ll mix a bar and a half of room temperature cream cheese, 2 cups of milk and some Instant White Chocolate Pudding up with our handy hand mixer. Then I’ll pour it into the pre-baked (and cooled) pie crust. I’ll put it in the fridge for a half hour or so to set up, then I’ll prep Banana Instant Pudding according to package directions and pour that on top of the cream cheese base before putting it back in the fridge.

Hours later, I’ll scoop out a small container of Cool Whip to top the pie. Delicious and so easy!

I haven’t decided if I’m taking a little help from the store for the meatball casserole as well. That’s simply meatballs in a single layer in a casserole dish, topped with a jar of marinara and shredded mozzarella. It cooks for about 45 minutes (at 350 degrees) if I’m using frozen meatballs, and just until hot and bubbly if I make fresh ones. Choices, amirite?
