Weekly Menu 02.03.19 kicks off February with a Party!
A Super Bowl Party that is. The shortest month of the year has a couple of “holidays” – one super fun (who doesn’t like bar food?) and one Hallmark one. I’m not a huge fan of Valentines day – especially now that the cards have gotten obscenely expensive. Plus there is too much pressure! Single, coupled, married: there is really no winning with this expensive “holiday”.
So we’ll celebrate early in the month instead, with our Fabulous Super Bowl Party Menu.
This is a perfect excuse for chips, pizza and wings though – it doesn’t have to be elaborate or even very well thought out!
I went to college in Boston (as did my favorite baby brother) so in theory I should be pro Patriots, but I never saw a game when I lived there, probably because the stadium was far outside of the city and I had no transportation. (This was way pre-Uber.) Plus: sports in general were not a priority. Three sons later, I can tell you a thing or two…

We’re having Bert’s favorite chicken early on. It’s oven crispy with just a bit of oil and some panko breadcrumbs.
On Tuesday, we’re going with baked potatoes for a change (YUM – SPUDS!) and I’m going to bake a couple extra so they’re ready to crisp in the oven on Saturday and make some loaded (sour cream, bacon and cheddar cheese) wedges, a la Potato Skins. If you’ve never made Chopped Burgers you don’t know how much easier they are than portioning and forming regular burgers. They caramelize great too, so you get a really beefy taste. More on that later.
