WEEKLY MENU 01.19.20
Plan for mid-January with our Weekly Menu 01.19.20~ easy, fast meals that will get dinner on the table easily every night.
The weather here in Erieland is downright bizarre this winter season. We’ve only had about 27 inches of snow so far. Based on averages, we should be at about 60 inches of snow. Our all in season average is 101 inches.
I miss it!
There is a fair amount of complaining about the snow in Erie, but we’re a hearty bunch, and it generally doesn’t affect our day to day living. Christmas 2017 we got over 65 inches in two days (you read that right) of snow. THAT affected us.
In general though, winter is a great time to do some hunkering down in front of the fire and enjoy early sunsets. We do a little light hibernating to combat the go-go-go of Erie summer.
Fingers crossed we’ll pick up some snow soon!
Weekly Menu 01.19.20 Notes~
We’re having Veal Milanese on Sunday – it’s basically flattened veal lightly breaded and pan fried. It’s delicious, but if you don’t want to do veal, try chicken instead – it works great too. We’re starting with a super easy appetizer: Baked Fontina. More on that later.
We were in New York about a year ago and had some New York style cheesecake that was simply fantastic. The recipe we’re linking to is the closest we’ve tried. It’s super easy too – it just takes some time to make. It’s not exactly the same as New York, but it’s a lot cheaper than going for an overnight to get some.
Full disclosure: I’m the only one in the house that likes mushrooms. (And I adore them). But in order to accommodate the non-fungi lovers, I often substitute a different veggie for them in recipes that call for them. Scallions (green onions) are a tasty, pretty accompaniment to steak, so that’s what we’re doing here.
