Our Weekly Menu 01.13.19 makes the planning easy!

The Weekly Menu 01.13.19 has grilled food a couple times, but it is FRIGID around here. No one wants to cook outside, so we’re using a grill pan on the stove. If you don’t have a stove-top grill pan (affiliate link) I’d strongly recommend one for the winter months. It let’s you cook in a healthy way on the stove top, with little added oils and fat. Perfect for meat – we’re using it for chicken on Sunday – it’s excellent for grilling veggies too. This one is reversible – you can use the other side as a griddle. Hellooo pancakes!

Red Beans and Rice are a New Orleans staple~

Especially for Mondays when washing was typically done. It cooks low and slow all day, so it’s perfect for the crock pot. THIS week I’m planning on soaking the beans over night. Ha! Unlikely.

We’re lightening it up by serving with some grilled turkey sausage: here’s the stove-top grill pan (affiliate link) at work again this week! Any type of sausage would work here – andouille would be the perfect choice if you have it available. Use your favorite.

We re-visited a restaurant in town that used to be a haunt of ours pre-move.  Baby Boy reminded me that I used to make a meal from there. I added it to this weeks menu: Cheese Raviolis in Chicken Broth. Super light, it’s a vegetarian pasta meal that we all love. I’ll cook the frozen ravs in the chicken broth and add some frozen peas at the last minute. I’ll use my trusty vegetable peeler (affiliate link) to shave some Parmesan on top of the ravs once they are in bowls.  Easy peasy.

We’re having pizza instead of Soup Friday.

If I remember to take pictures, I’ll show you how easy homemade pizza dough is to make. Store bought fresh dough is available almost everywhere now, though,  so you can do that instead if time does not permit rising. Or, you know, order one in.
