Sloppy Joe Sliders are a Party in a Little Bun~
Sloppy Joe Sliders take the best (and easiest) Sloppy Joe Recipe around and makes it better by “sliding” it!
Why is little food so much fun? We all know we’re just going to eat more of it than we would if it was regulation size, but there’s something about getting two or three little sliders that is so much better than one big one! Of course, you be you: if you like the big sandwiches, check out our Bacon Cheeseburger Sloppy Joes. Those are gargantuan.
Sloppy Joe Sliders are also super kid friendly.
They aren’t overwhelming, and a single sandwich is the perfect size for the little ones. Now if your little ones are a little bigger than that, they can have two or three (or four!) without any trouble. This recipe is perfect for halving – it makes 24 sliders as is, but 12 sliders might make more sense for your crowd.
Doubling the recipe will get you 48 of these babies.

It’s Sloppy Joe Slider Time!
Get the meat and onions browning in your big cast iron skillet (affiliate links follow – see disclaimer page for details).
While the beef is cooking, cut your dinner rolls. You can use actual slider rolls, but they’re crazy pricey and don’t taste any different. These babies were super cheap and just the right softness.
This is actually the hardest part of this recipe. Are you ready? We need to slice the rolls in half horizontally. Get your trusty serrated knife out for this job. Put the rolls on a flat surface, and slowly cut the buns. Keep the rolls steady with your hand on top. (You’re going to smush them a bit – it’s okay – it just makes them taste better!)
Slowly, slowly. Take your time, we’re trying to keep the slab together. Of course, you know what happens if the rolls separate. Yep.
Not a thing.
Cut both packs of buns.
Once the ground beef is cooked (and drained), add all the sauce ingredients. Just add them one at a time to the ground beef in the pan and stir well.
Then, using surgical precision, split the beef into two sections so each of the segments will have about the same amount of beef.
While the beef is cooking, prep your rolls by adding four slices of cheese to each base. And by prepping, I mean remove the cheese from the plastic wrap. We’re a classy crowd around here.
Then add the beef, spreading it out all the way to the edges.
Add four more slices of cheese. Then the tops of the buns.
Bake the Sloppy Joe Sliders for 10 to 12 minutes, until the cheese is melted and the sliders are golden brown. Brush with butter and sprinkle with a little bit of kosher salt and some dried parsley.
Use a butter knife to slightly separate the sliders for serving.
Ooey, gooey goodness. On a baby bun.
Sloppy Joe Sliders
Ingredients
- 3 pounds Ground Beef (we used 80/20)
- 1 medium Onion, finely chopped
- 2 packs Dinner Rolls, 12 connected rolls per pack
- 16 slices American Cheese (we used Swiss)
- 1 cup Ketchup
- 1 cup Water
- 2 tbsp Yellow Mustard
- 2 tbsp Brown Sugar
- 2 tbsp Apple Cider Vinegar
- 1/2 tsp Worcestershire Sauce
- Tabasco Sauce to taste
- 1 tbsp Butter
- Kosher Salt & Dried Parsley for Garnish
Instructions
- Preheat the oven to 400 degrees F.
- Warm skillet on medium high heat. Sprinkle the skillet lightly with kosher salt and add ground beef once pan is heated through. Cook the ground beef and onions in large skillet over medium high heat until browned through, about 10 minutes.
- Meanwhile, cut rolls horizontally using a serrated knife, trying to keep the rolls together in two single slabs. Place bases on sprayed baking sheet. Place four pieces of cheese on each base.
- Drain all visible fat from ground beef and discard.
- Add ketchup, water, mustard, brown sugar, apple cider vinegar and Worcestershire sauce to beef. Add Tabasco if desired. Mix well and allow flavors to meld, cooking over medium high heat for about 5 minutes. Taste for seasoning, and add more kosher salt and pepper if needed.
- Separate beef in two and add one portion on top of each segment of dinner rolls. Add four more slices of cheese to each slab and cover with top of rolls.
- Bake until cheese is melted and rolls are browned, about 10 to 12 minutes.
- Melt butter in microwave for 30 seconds in a microwave safe bowl. Brush the cooked sliders with butter and sprinkle lightly with kosher salt and dried parsley.
- Separate sliders slightly with butter knife to make serving easier.
