Shredded Chicken Joes
Shredded Chicken Joes are a go-to for summer when the schedule is crazy.
Shredded Chicken Joes is a dump meal: everything goes into the pot without being cooked first. Shouldn’t all crock pot meals be like that? Sigh.
I mix all the ingredients for the sauce in the big measuring cup (affiliate link) so I dirty one less bowl. Always spray the crock pot (affiliate link) with cooking spray to allow for easier clean up.
I use a large slow cooker(affiliate link) for these so I can place the chicken in a single layer on the bottom. If you don’t have a large size to pick from (doesn’t everybody have multiple crock pots?) just layer the chicken with some sauce as many times as you need to get all the goodness in the slow cooker.
Pour the sauce over the chicken and cook. I usually make chicken in the crock pot mid afternoon, so I cooked this on high for about 3 hours. It can be put on in the morning though – just cook on low, and allow between 6 and 8 hours, depending on the size of the chicken breasts. If it cooks for a really long time, the chicken will be a little dry, but the sauce will make up the difference.
All the boys know how to shred the meat from the crockpot – we taught them early and often – so they take a couple forks to the cooked chicken and then load up the buns. We had sliders tonight (dinner rolls are the perfect slider size) but these are great on regular rolls, hot dog buns or on top of some nicely shredded lettuce. We usually have a noodle side with this – Asian Peanut Noodles make a nice accompaniment. The Roasted Red Pepper Pasta works too.
A little mayo on the bun rocks this recipe, as does a dill pickle chip (or two) and/or some pepperoncini.
Shredded Chicken Joes
Ingredients
- 2 pounds boneless, skinless chicken breasts, (about 4)
- 1/2 cup Ketchup
- 1/4 cup Brown Sugar, packed firmly
- 1 tbsp Apple Cider Vinegar
- 1 tbsp Yellow Mustard
- 1 tbsp Chili Powder
- 1 tsp Onion Powder
- 1/2 tsp Salt
- 1/2 tsp Freshly ground black pepper
Instructions
- Spray the inside of a slow cooker, and set to high heat. Place chicken in single layer if possible on bottom. If not possible, layer chicken with sauce mixture.
- Prepare sauce mixture: combine all remaining ingredients (ketchup, brown sugar, vinegar, mustard, chili powder, onion powder, salt and pepper) in small bowl or measuring cup.
- Pour sauce mixture over chicken (layering if needed as described above). Lid slow cooker and cook on high for 3 to 4 hours, or on low for 5 to 6 hours. Serve on burger buns or slider buns.
