Plan Easter Dinner Today!
Because the most important holy day of the Christian calendar doesn’t get nearly as much love as Christmas, an eclectic crowd can be pulled together from family, friends, and even co-workers to make this your best Easter Dinner ever.
Ask around to see who isn’t headed home for the holiday
And invite them – all of them! This is a perfect holiday to take guests up on their offers to bring something. I like to ask if they have a preference, and if not, take a look through the menu and ask them to bring whatever strikes your fancy.
Easter Dinner is the perfect time to decorate with pastels – the purple plates are the perfect addition to the table. Christmas Tree Store, Dollar General and Dollar Tree are all great places to pick up pastel items. Mix and match – there’s nothing saying yellow napkins can’t go with the pink tablecloth. Put a big vase of tulips in the center of the table and you’re good to go.
Remember this strategy while planning the Easter Dinner Menu~
I link to an absolutely divine Carrot Cake recipe from Ina Garten – it’s actually a cupcake recipe that I make into a layer cake. If you’re in a hurry (or don’t particularly love baking) I can heartily recommend Sam’s Club for a big, delicious Carrot Cake. It’s not cheap, but it is worth every penny.
Speaking of not cheap
Now is not the time to buy the cheapest ham you can get your hands on. Here in Erieland, we’re lucky enough to have easy access to Smith’s Provision. They have amazing ham that is perfect for special occasions. Look around where you are and try to find a local specialty.
Ham is one of the easiest, most fool proof main courses you can make. It’s pre-cooked, so you can’t even serve it raw! Add in some potatoes and seasonal veggies, and you have a meal. Check out the link below for all the how-to’s.
If any of your guests are vegetarians
I’d recommend adding or substituting the potatoes with a pasta dish.
This Tuscan White Bean Pasta would be perfect.
I’m sure you’re getting antsy, so, without further ado, here is the menu:

If you’d like another decadent side dish, add in Scalloped Onions – they go great with ham.
