Pork Tenderloins are usually sold in at least a two pack – at our grocery store we buy them in the family pack. It has 4 tenderloins and usually costs under ten bucks. In addition to being cheap, they really take well to marinades, rubs and sauces.  I freeze the second pack of tenderloins for another meal.

Pork Tenderloins don’t need too much prep,

but it is important to trim the silver skin off. Use a good paring knife (affiliate link) and take your time. When done right, most of the fat will be gone too. Tuck the skinny edge under to make the tenderloin uniform for cooking.

Using the same paring knife (affiliate link), cut small slits into the tenderloin for the thinly sliced garlic.

Pop it into the oven or use your MAGENTA! crock pot (affiliate link). It is ready when the internal temperature using an instant read meat thermometer (affiliate link)  is between 145 and 160 degrees F. Slightly pink is actually okay, although not so much at our house. Let it rest, covered loosely with foil, for a few minutes while you make the sauce. I don’t recommend putting all the sauce ingredients in the crock pot because the sauce tends to get a little bitter – the sauce is much fresher prepared last minute and it can be done while the tenderloin is resting.

If there are any pan juices, add a few tablespoons to the sauce.

Ingredients

  • 2 each Pork Tenderloin, about 1# each
  • 4-5 cloves Garlic
  • 3 tbsp Butter
  • 1 tbsp Parmesan Cheese
  • 1 tbsp Dried Parsley
  • Kosher Salt & Ground Black Pepper to taste

Instructions

  • Preheat oven to 425 degrees F.
  • Clean all silver skin from tenderloins. Pierce the flesh with multiple slits cut with a paring knife, about 1" apart.
  • Slice 1 garlic clove very thinly with paring knife. Stuff slices of garlic into slits on tenderloin.
  • Salt & Pepper well, and dot with about 1 tablespoon of butter. Place in preheated oven. Pork will bake in oven for 25 - 30 minutes. Conversely, cook tenderloin in crock pot on low for 4 to 5 hours, or high for about 2 hours.
  • Pork Tenderloin is cooked when internal temperature reaches 145 degrees to 150 degrees F. Let sit, loosely covered with foil, for 5 minutes or so.
  • Meanwhile, chop the remaining garlic cloves finely. You are looking for about 1 tablespoon of well minced garlic for the sauce.
  • Place remaining 2 tablespoons butter, chopped garlic, parsley and Parmesan in small sauce pan. Melt butter and stir well over medium heat. Turn off heat when sauce is combined. If there are any pan juices, add up to a few tablespoons to sauce.
  • Slice tenderloin and spread Parmesan Garlic sauce over. Serve immediately.

Low carb, low fat and high flavor! ♥
