Meatloaf Meatballs: Make Easy Comfort food now for dinner!
Who doesn’t love meatballs? Meatloaf Meatballs are delicious on a bed of Weeknight Mashed Spuds or a nice hoagie bun. Or on a fork right out of the fridge.
I’ve said it before: our boys are Diner Boys through and through. Meatloaf has a long been a favorite. And I love ground beef recipes for the taste almost as much as the frugality aspect. These are a fun switch up, though, when Meatloaf Monday is getting a little blase. Or if your kids say no to meatloaf – but gobble up meatballs. This would be great on zoodles too – if you want to maintain the “spaghetti and meatballs” vibe.
LEFTOVERS, BABY!
Meatloaf Meatballs make excellent leftovers – cut them in half to put on some nice white bread and slather with some ketchup and lunch is ready to go!
Start with your big bowl (affiliate links follow) with the eggs, ketchup and Worcestershire.
Then mix well before tossing in the panko. If you want to make it low carb, skip the breadcrumbs entirely. Use sugar free ketchup too.
Form the meatballs into 4 ounce balls. I use my digital kitchen scale to make sure they are uniform in size so they cook at the same time. You can also use an ice cream scoop – whatever size works for you will be absolutely delish.
Cut each piece of bacon in half and place one piece on top of each meatball.
Coat each meatloaf meatball copiously with ketchup mixed with a little more Worcestershire sauce using your trusty silicone pastry brush.
Pop them in the oven and cook until they are brown and and the bacon is crispy. An instant read meat thermometer should read at least 160 degrees F.
Meatloaf Meatballs
Ingredients
- 3 pounds Ground Beef (I use 80/20)
- 1 cup Panko Breadcrumbs
- 3 tbsp Worcestershire Sauce, divided
- 3/4 cup Ketchup, divided
- 3 Eggs
- 8 slices Bacon
- 1 tsp Kosher Salt
- 1/2 tsp Freshly Ground Pepper
Instructions
- Preheat the oven to 350 degrees F.
- Combine eggs, kosher salt & pepper, 1/4 cup ketchup and 2 tablespoons of Worcestershire sauce in big bowl. Add breadcrumbs and mix well.
- Add ground beef and mix until just incorporated. Try not to over mix – you don't want little meatball rocks.
- Form meat into 4 ounce balls, and place on baking sheet.
- Cut bacon in half, and drape a piece of bacon over each meatball. Combine remaining 1/2 cup ketchup and 1 tablespoon of Worcestershire Sauce in small bowl. Brush each meatball copiously with sauce.
- Bake meatballs until cooked through. Bacon should be crispy, and internal temperature should be 160 degrees F.
- Enjoy with mashed potatoes or on rolls.
