Creamy Broccoli Soup for One
Creamy Broccoli Soup sounds great, doesn’t it? I adore broccoli. Obviously – some of my favorite recipes are Micro-Steamed Broccoli and Choppin’ Broccoli Salad. You know who doesn’t like broccoli? Pretty much everyone else in the house. Bert will eat it, but isn’t a huge fan. What to do?
Creamy Broccoli Soup for One!
You can use fresh or frozen broccoli. I’ve used fresh here – and cut up about 1/2 of a bunch. Use about 2 cups of frozen – and make sure it doesn’t have any ginormous chunks in it.
Chop some yellow onion and saute in a medium (3 quart) saucepan. (Affiliate links follow – see disclaimer page for details.) Use cooking spray or about 1 teaspoon of oil.
Once the onion is translucent, about 5 minutes, add the chopped broccoli to the pot. Just cover with water, and add a teaspoon of soup base. I’m using chicken soup base, but a vegetarian soup base would be delicious here.
Cover and bring to a boil over medium high heat. Check to see if the broccoli is tender after about 7 minutes. Keep boiling until the broccoli is cooked through.
Add the coconut milk. Using an immersion blender, whir the soup to your desired consistency. I like it mostly smooth with no crunch. If you don’t have an immersion blender, you can use a regular blender or even a potato masher in a pinch. Your soup won’t be completely smooth with a potato masher, but it will still be delicious.
Be careful with hot liquids in the regular blender – process 1/2 of the soup at a time, and be sure to cover the top with a kitchen towel while processing.
Taste the soup for seasoning before serving.
And adjust accordingly. I like a good amount of black pepper and a tablespoon or two of grated cheddar cheese to round out the bowl.
Keep it quiet
– but you can make this for as many people as you like – the recipe has a handy dandy serving slider to help with quantities.
This makes for one delicious lunch as is or a nice side dish with a sandwich. Crispy Chicken Club Sandwiches come to mind.

Ingredients
- 1/2 Yellow onion, chopped
- 1/2 head Fresh Broccoli, chopped OR 2 cups frozen, chopped
- 1 tsp Chicken Soup Base
- 1/2 cup Unsweetened Coconut Milk
- 2 tbsp Cheddar Cheese, grated (Optional)
- Cooking Spray
Instructions
- Heat saucepan over medium-high heat. Saute onion in cooking spray until translucent, about 5 minutes.
- Add chopped broccoli and just cover with water. Add chicken soup base or substitute your favorite vegetarian soup base. Cover and bring to a boil.
- Cook until broccoli is tender, about 7 minutes.
- Add coconut milk and blend soup with an immersion blender, a food processor or even a potato masher.
- Check for seasoning and serve immediately. Add cheese if desired.
