Chipotle Chicken Dip
This Chipotle Chicken Dip can be as spicy as you like it.
As written, the recipe provides a creamy, smoky dip with very little heat. Add a couple more chopped chipotle chiles and Chipotle Chicken Dip becomes spicier and even smokier.
This makes a great substitute for Buffalo Chicken Wing Dip. This dip would work well with a Mexican themed dinner, but it goes great with chips and burgers as well.
Chipotle Chicken Dip
Servings: 8 people
Creamy appetizer; serve with crackers, tortilla chips or veggies.

Ingredients
- 1 8 oz Brick of Cream Cheese
- 3-4 ea Chipotles in Adobo Sauce
- 1-t tbsp Adobo Sauce
- 1 can White breast chicken meat drained
- 4 ounces Sharp cheddar cheese, grated
Instructions
- Preheat oven to 450 degrees.
- Microwave cream cheese in microwave safe dish on high for 45 seconds to a minute, depending on your microwave. Cream cheese should be soft and mixable.
- Chop chipotles very finely; add chipotles, additional adobo sauce, drained chicken and 1/2 of the cheddar cheese to the softened cream cheese. Stir well to combine.
- Place mixture in sprayed or oiled ovenproof container. Sprinkle remaning cheese over top.
- Cook for 15 to 20 minutes or until bubbly and browned. This dip can be microwaved until it is hot and melted, but it will not brown.
- Serve hot with crackers, tortilla strips or veggies.
