Chicken Bacon Ranch Skewers
Chicken Bacon Ranch Skewers are an easy appetizer recipe that’s ready in 20 minutes. Low carb and keto friendly, these little bacon bombs are sure to be a hit!
We love the combo of chicken, bacon and ranch. Obviously. We have a (great) recipe for Chicken Bacon Ranch Pasta Salad and another one for Cheddar Bacon Ranch Pulls. (We skipped the chicken on that one because we couldn’t figure out where to put it.) Why do we have so many?
Because the Chicken Bacon Ranch combo is fabulous!
Plus the boysies love the combo. What’s not to love? These tidbits are ready in a flash and cook in less than 20 minutes. You can make them in advance (great for parties or football Sunday) and take them directly from the fridge to the oven, to the hungry masses. Plus they come with DIP! Everybody loves dip.
Cut the chicken breast into small (1/2″ or so) chunks. Sprinkle with half the ranch seasoning.
Toss gently. Cut each piece of bacon into 4 sections. Wrap a piece of bacon around each piece of chicken and skewer with a toothpick to hold bacon in place.
These are on top of a cooling rack (affiliate links follow – see disclaimer for more info). You don’t have to use a cooling rack – but it lets the bacon fat run off so the skewers aren’t sitting in it. Put the rack into a baking sheet to cook. In the old days, I’d have used a broiler pan, but they don’t fit in my dishwasher anymore, and I’m not cleaning those suckers by hand.
While the skewers are cooking, prep the ranch dressing – add all three ingredients into a small bowl and whisk.
Cook the Chicken Bacon Ranch Skewers in a preheated oven until crispy and brown.
Make sure the chicken is cooked through, using an instant read thermometer. It should read at least 160 degrees F. Serve them immediately with the ranch dressing. It doesn’t matter if you put them on a gorgeous platter or a plain white plate, they’re going to go. Fast.
Chicken Bacon Ranch Skewers
Ingredients
- 8 ounces Chicken Breast, cut into 1/2 inch chunks
- 6 or 7 pieces Bacon, each piece cut into 4 pieces
- 1 tbsp Dry Ranch Dressing Mix, divided
- 1/4 cup Mayonnaise
- 1/4 cup Buttermilk (or regular milk in a pinch)
Instructions
- Preheat the oven to 475 degrees F.
- Sprinkle half the ranch dressing mix on the chicken. (About 1-1/2 teaspoons). Mix well.
- Wrap each piece of chicken with a piece of bacon, securing with a toothpick. Continue until all chicken is wrapped. Place skewers on a rack inside a baking sheet or a broiler pan. They can be placed directly on the baking sheet if need. (See below.)
- Bake Chicken Bacon Ranch Skewers in oven.
- Meanwhile, combine remaining Ranch Dressing Mix with mayo and buttermilk. When well mixed, put in serving dish.
- Remove Chicken Bacon Ranch Skewers from oven when bacon is crispy and browned uniformly, after about 10 minutes. If preparing without a rack, turn each skewer over after about 5 minutes. An instant read thermometer inserted in the center of the skewer should read at least 160 degrees F.
- Serve immediately with ranch dressing.
