Baked Bruschetta
This Baked Bruschetta checks all the boxes for my favorite appetizers: it’s fast, it’s easy, it’s 3 ingredients, we use premade items, and the leftover bread is served with dinner.
Our grocery store is awesome, and it has an olive bar that is super fresh and really well stocked: their bruschetta is delicious, so we use that premade shortcut for this easy appetizer. Chunky salsa would work as well if a good bruschetta isn’t available: use shredded pepper jack or cheddar as a topper for those.
Not everyone at our house likes bruschetta (apparently it’s a chunky tomato thing) so I usually make some of the appetizer without it – I think the official name then is “toasted cheese”.
Baked Bruschetta

Tasty appetizer using prepared bruschetta.

Ingredients
- 1/2 cup Bruschetta (store made)
- 1/2 loaf French Bread
- 1/2 cup Shredded Mozzarella
Instructions
- Preheat oven to broil. Slice bread on the diagonal into 1/2 in slices and place on a sprayed or greased baking sheet.
- Toast bread on both sides, about 2 minutes per side; the bread doesn't need to be brown as much as it needs to be firm so it won't get soggy when you add the bruschetta.
- Place about one tablespoon prepared bruschetta on each piece of toast, and top with about the same amount of mozzarella.
- Return to oven and broil until cheese melts and browns slightly, about a minute. Serve immediately.
