WEEKLY MENU 04.18.21
We’re celebrating BIG during the Weekly Menu 04.18.21 – two family birthdays during the same week!
The Weekly Menu 04.18.21 includes Birthday Celebrations for the OG Baby Boy, and the Betwixt and Between Baby Boy – who are both home for their birthdays for the first time in YEARS. We’re serving up Italian food for days, with a break in the middle to go out for a joint celebratory dinner. The Pandemic does have it’s benefits, and this “Bonus Year” with the boysies is one I thank God for regularly.
Many moons ago, we celebrated the OG Baby Boy’s second birthday a mere two days before the Betwixt and Between Baby Boy was born. The family joke is that it was the best day of OG Baby Boy’s life immediately followed by the worst. Despite being dethroned as the only child, the OG welcomed BB with only moderate adjustments, and they became fast friends.
The boysies birthdays aren’t the only ones, family wide. My sister-in-law’s birthday is April 17th, and my slightly older brother shares the day with the OG Baby Boy on April 18th. Busy month! Happy Day, Kristen and Marty~ we’ll raise a glass to you both during our multi-day celebration.
If you look at the Weekly Menu 04.18.21, you’ll notice, dear reader, that it’s a little decadent. To paraphrase Oscar Wilde, “All things in moderation – including moderation.” We’re going all out. I’ve mentioned it before, but celebrating at our house always, always includes Italian Food. So we’re having it twice (at least). You get to pick your favorite meal for your big day, and the Weekly Menu 04.18.21 reflects the OG Baby Boy’s fave on Sunday night, and the Betwixt & Between Baby Boy’s on Tuesday.
We’re headed out for a joint B-Day dinner on Monday.
That’s all about Mama’s celebration. I’m going to need a glass of wine or two while we reminisce. The boy’s will probably order Italian. And yes, you’re seeing that right: there are two, count ’em, two cakes on the menu this week. The Coconut Poke Cake is the OG’s go to, and Mr. Betwixt & Between enjoys a classic Chocolate Chip Cookie Cake for his special day. I’ll be sure to stock up on candles and ice cream.
We’re only decorating once though~
If you don’t feel up to the same party-hardy mentality as we’ve got going, sub in Red Beans and Rice for a meatless Monday, and add a pan seared fish taco to the menu on Tuesday. Easy peasy. We’re lightening up once Wednesday rolls around. We’re grilling and eating some salad to get us back on track.
The “Chili-Ranch” dressing on Thursday is stupendously simple: we add about a tablespoon of chili powder to a cup of Ranch Dressing. (Affiliate links follow – see disclaimer page for details.)
