The holidays are over. So sad.
Just kidding! I love it when we get to the other side of the holidays~ God love ’em, but they are exhausting, amirite? So they’re over but we’re still a little bit in the mode around here – our college boys are still in the house, and will be through the next week. Bert and I celebrate our anniversary on Wednesday and Baby Boy has a birthday the week after he goes back to school, so we’re doing a little pre-partying.
I’m planning to get a little more creative this year as I “Evolve not Resolve“.
I like to give experiences rather than tchotchke for gifts. My favorite Christmas gift was a certificate to a place called “Cocktails and Color“. They teach a big group of newbies to paint with step by step instructions. It’s also BYOB – which I figure will put us in the right mood. Because I’m going too. Naturally.
We’re a full on “initial” kind of family around here.
Everything is referenced with first letters only. Names are especially affected. Middle son regularly calls me “K” and all of our copious selection of aunts and uncles have their own designations. (My Baby sister is simply “AF” – which she likes, luckily.) My father’s (DOLD) baby brother is UFP – he’s a priest, so he’s technically Uncle Father Pat. I tend to call him just Uncle Pat to his face, but he is always, always referred to as UFP around here.
Weekly Menu 01.05.20 has a special meal for UFP.
He’s coming up for Sunday dinner. It looks like he’s going to miss the Christmas Decorations, but dinner at least won’t disappoint. He’s a retired Navy Chaplain and spent the actual holiday at sea as a chaplain for a cruise ship in the Caribbean. He’s always an interesting guest!
Baby Boy is making dinner on Wednesday – super easy to do because it’s one of his most requested meals: Sausage Orecchiette. It only takes one pan and 5 ingredients. Perfect for a weeknight meal. We’re having a big dinner on Saturday because next Sunday is back to school for the collegiate crowd. We’ll cap off dinner with Baby Boy’s Birthday cake of choice – triple chocolate. Don’t tell anyone, but I use a box mix with about a cup of chocolate chips tossed in and store bought fudge frosting bumped up with a little bit of extra vanilla. And I shave chocolate on top. It might even be more than triple chocolate. Yum.

You might have seen the links for the Twice Baked Potato Casserole, the Eclair Pie and the Cheddar Cheese Crackers before. We’ve had them all and they are, simply, spectacular. So we’re bringing them back again! The shear simplicity of the Cheddar Cheese Crackers makes them a must try. It would be worth picking up a food processor (affiliate links follow – see disclaimer page for details) if you don’t have one.
