It’s Fall Y’all! Let’s plan dinner~
Weekly Menu 10.20.19 runs the gamut for dinner – easy, super fast, salad, buffalo chicken (yum!). We’ve got it all covered for a busy week.
Erieland is starting to feel the chill of autumn. Is it a thing everywhere that turning on the furnace is akin to letting the devil that is winter into the house? It’s a big thing in Erie. For weeks I lit candles in the evening and got out the blankies. We had the first fires of fall. All to try to pretend it wasn’t 52 degrees INSIDE THE HOUSE. And, sadly, we finally caved.
I’m tough, but my fingertips were numb.
The joyous side to that, of course, is the fall food. Soups, chilis, slow roasted meats and casseroles. I’m licking my lips full time. I love the grill, but there is just something about a cast iron fried burger that makes my day. Our Weekly Menu 10.20.19 celebrates the harvest. We’re starting with a roasted pork tenderloin smothered with sauteed apples. What goes great with apples? Yep. Cheddar cheese. Hello Risotto. The boys call risotto cheesy rice anyway, so this is a match made in heaven.
We’re eating healthy with the grilled Chicken Cobb Salad. We’ll use a cast iron grill/griddle combo (affiliate links follow – see disclaimer here). This one is huge – it covers two burners and stays hot once it gets there.
We’re throwing a pumpkin chili into the mix – it’s a beautiful recipe that includes black beans and ground pork too. I’m still up in the air whether we’ll use the pork or sub in ground beef. Chicken would be delightful too. It is the other white meat. Hmmmm. I better decide before I get groceries.
