Weekly Menu 04.21.19 includes EASTER DINNER! One of my favorite holiday celebrations – simple, family oriented and very spiritual. Plus, no more meatless Fridays for a year – unless we want to!
One of the best parts about having ham for dinner has to be the leftovers. We have a huge ham to look forward to from our go-to Erieland Purveyors, Smith Provision Company. YUM.
Hot Ham and Cheese Sliders are on the menu for Wednesday, and they really are as easy as they sound: dinner rolls cut in half, smeared with mayo or honey mustard and topped with assorted cheeses. I usually roll up two or three in a single piece of foil then pop them in the oven at 425 degrees until they’re gooey, about 10 minutes. They’re addictive as hell, but seriously amazing because they’re so simple.
Baby Boy sent me a video of Rigatoni Pie, so we’re going to give that a go this week too. It looks pretty simple but fairly labor intensive. Plus we’ll be eating it for a month, I’m sure. I’ll probably mix it up a little bit and add some meat: not sure yet if it will be ground beef or sausage. I’ll let you know how it goes.
