We are having a typical family Sunday Dinner – easy appetizer and dessert included. Chicken Crepes are a real throwback – when I was starting out my storied cooking career, I created it for our family big meal. It’s not too terribly difficult, even with the crepes (which we often skip when making this meal) but it sure was time consuming.
In the old days (ca 1980’s), skinless, boneless chicken breasts were the exception instead of the norm – and they were pricey, so I usually started with regular bone in, skin on chicken breasts and de-boned them myself. Let me tell you, when you’re making dinner for ten, that takes a while. It was worth it then, though, and it’s worth it now too!
I’m actually making the burgers on the stove top (Bert has the week off!) – and I do it without forming patties, which makes for a quick meal. The Salsa Chicken Tacos are started with a three ingredient crock pot recipe that you are definitely going to want to try.
We are in harvest season here in gorgeous Erieland, so we have lots of veggies and a fabulously easy fresh tomato soup later in the week. I’m trying a new recipe for our easy Friday night – meal. The Stuffed French Bread looks delish – and super easy, which are the two main requirements for a Friday night.
The heatwave finally broke around here, so we are hoping to get outside and enjoy the start of fall. Hope you have a great week!
