Sausage Stuffed Peppers

We normally eat this family favorite as an appetizer, but it makes an easy dinner too – it’s fast on to the table and already includes meat and veggies. Add some rice, pasta or crusty bread and it’s a full meal deal.
We like our food spicy around here so we use hot Italian Sausage and spicy peppers, but these are delicious with baby sweet peppers and sweet Italian sausage too. You could also do a little bit of both to get them to a medium spiciness – sweet sausage and spicy peppers or vice versa.
Because it seems pretty hit or miss on the spiciness of the peppers we get around here, especially jalapenos, the first thing I do before using them is to cut off a tiny bit and take a taste. That way I know what I’m dealing with. These banana peppers were not real spicy – leaving in a few more seeds or the ribs would have helped that.
Before you cut them, take a look at how the peppers are resting – you want them to lay flat when you cook them.
Saute the sausage over medium high heat until browned, breaking them up while cooking. After you drain them well, add the marinara and let it cook for a few minutes.
Spoon the sausage mixture into the peppers and sprinkle liberally with mozzarella cheese. I use pre-shredded mozzarella cheese to save the aggravation of trying to shred it at home. Provolone works great here too.
Bake for 15 or 20 minutes until the cheese is melted and the peppers are tender. This makes a great first course for Italian night.
Sausage Stuffed Peppers
Ingredients
- 3/4 lbs Italian Sausage, hot or mild
- 5 -6 small Peppers: banana, jalapeno, baby sweet peppers
- 1/2 cup Marinara Sauce
- 1 cup Mozzarella Cheese, shredded
Instructions
- Preheat oven to 375 degrees.
- Remove sausage from casings if necessary, and brown in a skillet, breaking up while cooking.
- Meanwhile, cut peppers in half lengthwise and remove seeds. Spray baking dish with cooking spray and lay cut peppers in a single layer across bottom.
- Strain fat from cooked sausage and discard. Add marinara sauce to skillet and allow to cook for a few minutes to meld flavors.
- Spoon sausage mixture into each pepper. Sprinkle mozzarella liberally across stuffed peppers.
- Bake in preheated oven for 15 to 20 minutes until cheese is melted and beginning to bubble. Serve immediately.
